Okay so this isn't Slimming World friendly but I've had it in my drafts for a while now and it was also featured on the Thirst Pockets website back in October and I feel like it needs a little more love!  It's absolutely delicious, I would hate to think how much syns you'd be for one slice, but hey if you're not counting syns go ahead and have yourself a slice of two with a cuppa, you won't regret it! 


1/2 cup Butter 
1 cup Sugar 
2 Eggs
3 Apples
1 Bar or a handful of Soft fudge pieces 
1 1/2 cups Plain Flour
1 teaspoon of Baking Powder
1 teaspoon of Vanilla Essence 
1 tablespoon of Olive Oil
Pinch of Salt 


1. Preheat your oven to 180c (gas mark 4) 
2. Mix together the butter & sugar ( I melt the butter a little bit in the microwave)
3. Peel and chop up your apple into small pieces and then boil it for 10-15 minutes or until mashable.
4. Break up your fudge or toffee into small pieces (if not already) and put to one side.
5. Once the apple is cooked mash it or blend it until soft and then add it to the butter and sugar along with your eggs, olive oil, vanilla essence & pinch of salt - give it a good mix
4. Sieve the flour and baking powder into the bowl with the rest of the ingredients and mix well.  (I use an electric hand whisk)  The mixture should be a medium consistency, not runny but not too thick.  
5. Add in your fudge or toffee and give it a good mix to blend with the rest of the ingredients.
5. Line a bread tin with a greaseproof liner or greaseproof paper.
6. Spoon the mixture into your bread tin, filling it just over half way.
7. Place the tin into your preheated oven and cook for 45-60 minutes.  Check your bread halfway through. 
8. Transfer your bread from the tin to a wire rack to cool and then enjoy! 

Tip* use a knife to test if it's cooked!  If the knife comes out without any mixture on it then your bread is ready!
